Pumpkin Seed Brittle

Ingredients: 100g butter, 125ml single cream, 30g honey, 130g sugar, 1 pinch of salt, 150g flaked almonds, 180g pumpkin seeds, 60g sesame seeds.

Put all the liquid ingredients with the sugar and salt in a saucepan and simmer for 5 minutes. Stir in the dry ingredients, then spread the mass thinly over two normal-large baking trays. Bake in preheated oven at 180 degrees for 12-15 minutes until golden brown. Not too dark, otherwise they will be too bitter. Not too light as they will be tacky. Cut in small squares after cooling.
