Vanilla Kipferl

Ingredients for about 30: 240g plain flour, 180g cold butter, 60g icing sugar, 100g ground pumpkin seeds, a pinch of salt.
For rolling 1 tsp vanilla sugar and icing sugar.

Mix the flour with icing sugar, salt and ground pumpkin seeds. Cut the cold butter, with a knife, into small pieces and quickly mix all ingredients into a dough. Place it in the fridge for at least an hour. Then shape it into a finger thick rolls and cut into 1cm pieces. Shape pieces into nice crescents. Place them on a baking sheet and bake at 180°C until golden. While still warm roll the Kipferl in the icing sugar and vanilla sugar mixture.
