Pumpkin Seed Cordon Bleu with PestoBeat the pork schnitzel out thin – salt it – lay a slice of ham on it – spread some pumpkin seed pesto on the ham – cover it with a second slice of ham – fold once in the middle and press together – mix some finely chopped pumpkin seeds 1:1 with dried breadcrumbs. Crumb the schnitzel as usual with flour, egg and then breadcrumbs mixture and fry.
Styrian Potato NoodlesBoil, peel and cool 220 g of floury potatoes. Mince the cold potatoes finely and knead to a smooth dough together with 1 egg, 100 g medium fine flour (type W480), 30 g semolina, 20 g butter and a little salt. Form the dough into a thick roll on a floured board and then cut it into little slices. Flour the dough pieces well and then roll them lightly back and forth on the board to form tapering noodles about the thickness of a little finger – namely "Schupfnudeln". Boil them in a generous amount of water for 2 minutes, drain and rinse them until cold. Fry the "Steirischen Schupfnudeln" lightly together with 2-3 tablespoons of Pesto, shaking the pan constantly. Serve with Styrian cabbage.
Quark Spread with PestoStir 1/4 kg reduced fat Quark together with some butter until the mixture is creamy, add salt, pepper a finely diced onion then 5-6 tbsp Styrian Pumpkin Seed Pesto to taste. Mix the Styrian Pumpkin Seed Pesto well in and let it rest for a short time. Garnish with boiled egg, strips of bell peppers, tomato wedges. The best way to serve this spread is with wholemeal bread or pumpkin seed bread.
