Styrian Pumpkin seed bread

450 g wholemeal spelt flour
1 bag dry yeast
1/2 tea-spoon salt
1 tea-spoon fennel and cumin
100 g Pumpkin snack seeds plain
350 ml lukewarm water
3 table-spoon Styrian pumpkin seed oil PGI

First mix flour, yeast, pumpkin seeds (keep one handful for covering) salt and herbs. Then pour in pumpkin seed oil and water. Knead the dough for 10 minutes. After kneading it needs a rest of 30 minutes.
Lay out the pan with baking paper and fill in the dough. Brush the dough with water and sprinkle the pumpkin snack seeds on the top.Preheat the oven to 220 degrees. Let it rest for another 30 minutes. After the rest put the bread and a bowl with water in oven. After 10 minutes reduce the heat to 180 degrees. Bake the bread for another 50 minutes.
